A pellet grill is a wood-fired convection oven with a thermostat. You set a temperature, an auger feeds wood pellets into a fire pot, a fan manages the burn, and the food gets real smoke with none of the fire management. It is the reason home brisket has become common.
What they do well and badly
Low-and-slow smoking, roasting and baking are where pellet grills excel: steady temperature for hours, wood flavour, and the ability to walk away. Searing is their weakness. If you want one cooker for both, pair a pellet grill with a cheap gas grill or a cast-iron pan for the finish.
Controllers and apps
Basic controllers hold a set temperature. Better ones (Traeger D2, Pit Boss Pro, Weber Connect) add WiFi app control, meat-probe alerts and cook timers, which genuinely matters on a twelve-hour cook. Traeger’s Pro 575 is the cheapest Traeger with WiFi.
Size
Cooking area is quoted in square inches. 500 to 600 is a family grill; 850 fits two briskets or a party. Vertical cabinets such as the Pit Boss 3 Series trade grilling ability for rack space.

Do pellet grills need electricity?
Yes. The auger, fan and controller run on 240 V mains power, so you need a weatherproof outdoor power point near the grill.
How much do pellets cost to run?
Around one to two kilos of pellets per hour at smoking temperatures, more at high heat. A 9 kg bag was $41.99 at BCF when we checked, so an eight-hour brisket costs roughly $40 to $80 in pellets.
Can a pellet grill sear a steak?
Most struggle. Pellet grills top out around 230 to 260 degrees and cook by convection, so they roast and smoke beautifully but sear poorly. Some newer models add a direct-flame sear zone; otherwise finish steaks on a gas grill or cast-iron pan.
